The activity of extractor industries consists of extracting crude olive-pomace oil from the fatty pomace obtained through the process for obtaining virgin olive oil. This product still contains an important percentage of fatty content, which is extracted in these companies whether by physical (centrifugation) or chemical means (thinners).
The product obtained, crude olive-pomace oil, must be subjected to a refining process and blended with virgin olive oil in order to be sold for consumption.
Currently in Spain there are 62
extractors in operation producing some 56,000 tons of oil per campaign: 77% via chemical and 23% by physical processes.
